Spinach Ricotta Stuffed Salmon

4 six ounce boneless, skinless salmon fillets, halved
2 cups ricotta
1/2 cup baby spinach
1/2 cup mayonnaise
salt and pepper

  1. Preheat oven to 350 degrees.
  2. Combine ricotta, spinach and salt and pepper.
  3. Place 1/4 of the ricotta mixture on top of a salmon fillet and sandwich with the other half. Repeat with remaining filling and fillets.
  4. Transfer stuffed salmon to a baking sheet and spread mayonnaise on top. Bake until salmon is light and flaky, about 15-20 minutes.

Makes 4 servings

Mixed Green Salad with Raspberry Vinaigrette

3 tablespoons vinegar
1 tablespoon honey
8 raspberries
2 tablespoons extra virgin olive oil
3 cups mixed greens
2 tablespoons dried cranberries
2 tablespoons walnuts, chopped
2 ounces feta, crumbled
salt and pepper

  1. Puree vinegar, honey, raspberries and olive oil. Season to taste with salt and pepper.
  2. Combine with mixed greens, cranberries, walnuts and feta. Serve immediately.

Makes 4 servings

Tomato Basil Rice

1 tablespoon olive oil
2 cloves garlic, sliced
1 cup diced tomatoes
1 cup hot water
1 cup rice
1 teaspoon dried basil
salt and pepper

  1. Heat oil in a large saucepan over medium heat and add the garlic, frying until fragrant. Stir in the tomatoes and cook until hot.
  2. Add the water, rice and basil and bring to a boil. Reduce heat to a simmer and cook covered until rice is tender. Fluff and season to taste with salt and pepper.

Makes 4 servings

Visitation Rights

Tonight was Shannon's friend's last night in town. She spent the day eating at as many restaurants as possible and still managed to prepare dinner for us when we got off work, which she ate as well, then had some 99 cent pizza and snacks afterwards. I don't know where she puts it all. I'm happy to have dinner cooked for me though. I guess having company's not so bad.

Everything was good, except that the Tomato Basil Rice totally scorched the bottom of my saucepan and it's very hard to get off. The main event was Spinach Ricotta Stuffed Salmon which is a nice, rich and cheesy dish. The salmon was cooked for well and I enjoyed it. I would've added a whole lot more spinach if I had made it, but other than that I have no complaints. That's a big thing for me! I complain about everything.

There was also a Mixed Green Salad with Raspberry Vinaigrette. Fresh raspberries made a really big difference in the flavor of the vinaigrette. A nice tart and sweet combination. We omitted the walnuts from Shannon's version so we didn't kill her.
