Creamy Butternut Squash Soup

3 pound butternut squash
2 small potatoes
3 tablespoons extra virgin olive oil
1 small onion, sliced
1 clove garlic, crushed
1/2 cup dry white wine
6 cups chicken broth
1 tablespoon fresh thyme, chopped
2/3 cup heavy cream
salt and pepper

  1. Preheat oven to 425 degrees.
  2. Roast potatoes and squash until very tender, about an hour. Remove from the oven and allow to cool to the touch.
  3. Meanwhile, heat olive oil in a large soup pot over medium heat. Add the onion and sauté until tender, then add the garlic and white wine.
  4. Bring the wine to a boil and reduce by half, then stir in the chicken broth and reduce heat to a gentle simmer.
  5. Cube the potatoes and slice the squash in half, scooping out out seeds. Add the potatoes and flesh of the squash to the soup.
  6. Transfer the soup to a food processor or blender and puree in batches. Return to the pot.
  7. Stir in stir in thyme and heavy cream and cook just long enough to heat through. Season to taste with salt and pepper and serve.

Makes 6 servings

Ok .. what kind of potato? Probably not the LC kind … but this looks fabulous (my gosh, I love food), and I just noticed the “Other Suggestions” box up there–awesome.

:) I’ll put potato “type” in during the lengthy editing process. But no, unfortunately not the LC kind, though I hear they’re working on one. Of course, it’d just be less starchy, which would mean it’d only really be as useful as jicama or turnip. You could omit the potatoes, though it’s nice to have a chunk of baked potato in a creamy soup, I think. If you can find a LC butternut squash, you’re good to go!

The other suggestions thing was both easier and more difficult than I thought it would be… but it works pretty accurately now! Dishes are also tagged by other dietary things, heat level and general categories, but that hasn’t been used for anything yet.

I’ll put LC butternut squash on my Christmas wishlist along with LC peanut butter chocolate ice cream … though not in that order. =D I almost got a cup of potato and bacon soup at Subway, but luckily, they had not lids, so I had no soup.

So is the Web site pretty much where you want it? I think it’s looking great!

LC peanut butter chocolate ice cream probably exists… just watch out for the sugar-free laxative effect :o

There are a few things that are almost done and not live and other than that I think we’re covered.
