Cauliflower with Raisins

1/4 cup raisins
1/4 cup sherry or apple juice
3 cups cauliflower florets
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon balsamic vinegar
salt and pepper

- Soak the raisins in the sherry while preparing the cauliflower.
- Bring a large pot of water to a boil and steam cauliflower until just tender.
- Heat a large skillet over medium heat and add the olive oil and garlic.
- Lightly brown the garlic, then stir in the vinegar, raisins and sherry. Bring to a boil, then reduce heat to a simmer.
- Drain the cauliflower and add it to the sauce. Simmer for several minutes, stirring to coat, until most of the sauce has been absorbed.
- Season with salt and pepper to taste and transfer to a bowl to serve.
