Spicy Thai Beef Stuffed Potatoes
1 pound potatoes, peeled and quartered
1/2 pound lean ground beef
4 red chilies, seeded and chopped
6 cloves garlic, minced
1 teaspoon ginger puree
3 tablespoons tamari or soy sauce
1/2 cup fresh basil, chopped

- Bring a large pot of salted water to a boil and add the potatoes, boiling until tender.
- Drain the potatoes and return to the pot to dry up excess moisture. Cool.
- Meanwhile, heat a large skillet over medium-high heat and add the ground beef, cooking until no longer pink.
- Add the chilies, garlic, ginger and tamari to the beef. Reduce heat to a simmer and let cook for a few minutes.
- Mill or shred the cooked potatoes and divide into 4 portions.
- Spread out one of the portions on a plate and spoon 1/4 of the beef mixture into the center. Gently form the potato around the beef to make a ball of potato with the meat in the center. Repeat with remaining filling.

A while back at the Karaoke Party I ate a potato dish stuffed with minced curried meat. I thought it sort of bland, but tonight I thought I'd try my hand at stuffing a potato with meat and spices and seeing how it goes. I think that they would have been improved a lot if I had baked them or deep fried them or otherwise cooked them afterward, but we were both getting very hungry and didn't want to bother with an extra step. Feel free to do so if you try the recipe, I'm sure it will be better!
The Spicy Thai Beef Stuffed Potatoes were, well, spicy. I was really expecting it to be way too hot for Shannon, but she loved it. Some of the things she finds spicy and other things that she doesn't baffles me sometimes. There's definitely no lack of flavor in this dish, loaded with garlic, ginger and basil. Again, the only thing that would've really improved it is frying or roasting the potatoes afterwards, or perhaps some sort of sauce or condiment (maybe Chutney?)
We're still sort of shopping on a day by day basis and I wasn't really sure what to serve as a side, so we just picked up some mixed greens and ate that with a simple vinaigrette. It was filling for a few hours, but I was feeling hungry again before bed time. I think a more filling entree or a very meaty side would've made the dinner more filling.
