Peanut Butter Cookies

1-1/4 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup shortening
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter
1 egg

  1. Preheat oven to 375 degrees.
  2. Sift together flour, salt and baking powder in a large bowl.
  3. In a separate bowl, cream shortening with sugars. Gradually add peanut butter and egg.
  4. Add the peanut butter mixture to the bowl of flour and mix well.
  5. Roll 1" balls out and place on a greased baking sheet. Gently flatten the top of the cookies with the prongs of a fork.
  6. Bake until firm and lightly browned on the edges, about 12 minutes.

Makes 12 cookies

They look so nice and poofy! Usually pb cookies look a bit dried out.

I could do that. And I’d charge only … oh, I already said that.

And you say you liked the taste even though you used shortening? I use shortening in icing, but not in baking. I don’t like the way icing tastes, including my icing.

You could do cream cheese icing. Especially if you mix it with peanut butter. Mmm … peanut butter …
