Crusted Tofu
8 ounces firm tofu, 1/4" sliced
1 cup buttermilk
1 teaspoon black pepper
2 cups bran or corn flakes, crushed
2 tablespoons sesame seeds
1/8 teaspoon cayenne pepper
2 tablespoons vegetable oil
1/2 teaspoon salt
- Combine buttermilk and pepper and marinade tofu for half an hour in the refrigerator.
- Mix bran flakes with salt and cayenne pepper. Drain tofu and press firmly into bran flakes to coat.
- Heat a large skillet over medium-high heat and add the vegetable oil. Fry crusted tofu until golden brown, about 3-4 minutes per side. Sprinkle with sesame seeds and serve immediately.
Makes 4 servings
Udon Noodles in Peanut Sauce
1/2 cup baby carrots
1/4 cup green peas
2 tablespoons sesame oil
8 ounce package Udon noodles
1 clove garlic, crushed
2 tablespoons peanut butter
2 tablespoons low-sodium soy sauce
1 teaspoon rice vinegar
1/2 teaspoon sugar
water
- Place peas and carrots in a sauce pan with enough water to cover and bring to a boil. Drain and run under ice water to prevent further cooking.
- Heat sesame oil in a large skillet over medium heat and add the garlic, peanut butter, soy sauce, rice vinegar and sugar. Stir until combined.
- Add the noodles and cook for several minutes until broken apart and coated with sauce. Toss in carrots and peas and serve.

Breakfast for Dinner
I have made a few terrible dishes in the past, but no dinner yet has warranted a disclaimer. Well, the time has come: DO NOT EAT THIS DINNER. This was totally a novelty meal and I'm sorry that I considered it. I was simultaneously trying to find a way to make tofu more palatable while trying to create a breakfast ingredient themed menu. This resulted in bran flake Crusted Tofu and Udon Noodles in Peanut Sauce. Thankfully, I omitted the jelly. The best part was undoubtably the sliced apple that accompanied the two dishes. Nothing against apples, but that's not good.
The tofu dish was so disgusting that I ate one bite and threw it all away. The flakes did not really stick so well to the tofu and tofu by itself just doesn't do it for me. The noodles could have potentially been a lot better, but the sauce was so incredibly thick that it sort of ruined it for me. It definitely had big peanut butter taste, but I could never fathom actually wanting to eat this. I sort of laughed in between bites and I did eat a decent portion of it, but I felt completely ridiculous doing so and think I only continued out of extreme hunger. The next time I want to do a breakfast themed dinner, I'm sticking with bacon and eggs.
If there is such a thing, please submit some delicious tofu recipes to me. I will likely reward you by publicly making fun of you on this website, but I still strongly encourage you to do so.
