Okra Patties

1 pound okra, chopped
1/2 small onion, minced
1/2 cup water
salt and pepper
1 egg, beaten
3/4 cup all-purpose flour
1/4 cup cornmeal
1 teaspoon baking powder
vegetable oil for frying

  1. Combine flour, baking powder, cornmeal, salt and pepper in a large bowl.
  2. In a separate bowl, combine okra, onion, water and egg.
  3. Gradually add the flour mixture to the okra bowl until you have a pancake-like batter.
  4. Meanwhile, heat enough oil to cover the bottom of a pan over medium-high heat.
  5. Drop a ladle full of batter into the center of the hot oil and fry until golden brown.
  6. Flip and brown the other side, then transfer to a paper towel to drain. Repeat with remaining batter.

Makes 6 patties
