Apricot Glazed Pork Tenderloin
1 pound pork tenderloin, trimmed
8 slices pork bacon
1 small onion, thinly sliced
8 apricots, pitted and halved
1/4 cup soy sauce
1/2 cup apricot jam or plum sauce
salt and pepper
- Preheat oven to 375 degrees.
- Season pork with salt and pepper and wrap bacon tightly around it, covering all exposed meat.
- Place onions in the bottom of an ovenproof dish and lay pork on top. Place apricots halves securely around the sides of the pork.
- Combine soy sauce and apricot jam together and cover pork and apricots.
- Bake in the oven until bacon is crisp, apricots soften and pork is cooked through to the center, about 45 minutes.
- Allow meat to rest before serving.

I made Apricot Glazed Pork Tenderloin this afternoon, with the intent of coming home in the evening and preparing some sides to go with it for my dinner. As soon as I started making this, I knew it would be something that Shannon would love. Perhaps because of this it was a bad idea to leave it in the fridge, because she ended up eating it all before I got home. From her recollection, the apricots were a deliciously tangy compliment and the whole salty, sweet and sour combination of the bacon and glaze really made it for her. From my perspective, it was very easy to make, involving little more than turning on the oven, mixing a few things together and throwing it all in a pan. I doubled the recipe to make it suited for several people.
