Maple Glazed Beets

1 pound small beets, peeled
3 tablespoons butter
2 tablespoons maple syrup
2 tablespoons balsamic vinegar

  1. Preheat oven to 400 degrees.
  2. Melt the butter in a small saucepan over medium heat. Stir in maple syrup and vinegar.
  3. Place the beets in an ovenproof casserole dish and pour sauce over top. Cover and roast in the oven until tender and sauce is thick, about 30-40 minutes.

Makes 4 servings
