Maple Glazed Beets

1 pound small beets, peeled
3 tablespoons butter
2 tablespoons maple syrup
2 tablespoons balsamic vinegar
- Preheat oven to 400 degrees.
- Melt the butter in a small saucepan over medium heat. Stir in maple syrup and vinegar.
- Place the beets in an ovenproof casserole dish and pour sauce over top. Cover and roast in the oven until tender and sauce is thick, about 30-40 minutes.
Makes 4 servings
