Fried Plantain and Okra

1/4 cup Jerk Marinade
1 large plaintain, sliced 1/8" thick
4 ounces okra, 1/2" rounds
2 red chilies, sliced
2 tablespoons olive oil
2 tablespoons butter

  1. Heat olive oil in a large skillet over medium heat and fry the plantain until browned on both sides, about 7 minutes per side. Remove the plantain and reserve.
  2. Add butter to the skillet and saute the chiles until softened, about 5 minutes.
  3. Stir in the okra and jerk sauce until okra is softened, about 3 minutes.
  4. Add the plantains and continue frying until reheated. Serve immediately.
