Curried Chick Peas
2 cups cooked chick peas
1 medium tomato, chopped
4 cloves
1 bay leaf
3 cloves garlic, minced
1-1/2 cups coconut milk
2 teaspoons turmeric
salt
- Combine all ingredients in a sauce pan over medium heat and cook uncovered until the sauce reduced by half.
- Garnish with cilantro, if desired.

Like many nights lately, I was just looking for a very simple and quick recipe to make for dinner tonight. I rummaged through the cupboards and decided on using coconut milk and chick peas and ended up making Curried Chick Peas. This is a very basic 1 pot recipe that pretty much anyone can make. There's nothing exceptional about it, but I have a fondness for chick peas prepared pretty much any way, so I still enjoyed it. I topped it with a plain grilled chicken breast and a wee bit of cilantro which made for a filling meal.
