Minted Green Peas

2 cups peas
1/4 cup scallions, chopped
1/4 teaspoon mint
salt
water
- Bring salted water to a boil and cook peas until just tender, about 5 minutes.
- Drain peas and stir in scallions and mint. Serve immediately.
Makes 4 servings
