Greek Stuffed Zucchini

1/4 pound ground beef
1/2 cup cooked rice
1 egg, beaten
2 tablespoons lemon juice
2 tablespoons olive oil
1/2 medium onion, chopped
4 small zucchini
2 tablespoons parsley, chopped
2 tablespoons dill, chopped
1 teaspoon dried mint
salt and pepper
- Preheat oven to 350 degrees.
- Slice zucchini in half lengthwise and remove the inner flesh. Chop the flesh into very small pieces.
- Heat the olive oil in a large skillet over medium heat and add the zucchini flesh, beef, onion, rice and seasoning.
- Cook until beef is no longer pink, about 8-10 minutes, then stuff the zucchini skins with this mixture.
- Place the zucchini in a baking dish with 2 cups of water, place in the oven and bake for about 40 minutes.
- Combine eggs and slowly add the lemon juice, with juices from the pan. Use this as a sauce for the zucchini.
