Cucumber, Beet and Feta Salad

1 small beet, roasted or boiled
8 slices cucumber
1 ounce feta, crumbled
1 teaspoon white wine vinegar
1 teaspoon sugar
ground pepper
- Slice the beet 8 times vertically, but not all the way through to the bottom.
- Insert the cucumber slices into the slices in the beet and garnish with feta.
- Prepare a dressing of vinegar, sugar and ground pepper and pour over beet to serve.
