Chili Fried Potatoes

1 pound new potatoes
2 red chilies
4 cloves garlic, mashed
3 tablespoons olive oil
water
salt and pepper

  1. Place potatoes in a large pot and top with water. Bring to a boil and cook until tender, about 20 minutes.
  2. Drain the potatoes and cut into 1/2" slices.
  3. Meanwhile, heat oil with garlic and chilies in a large skillet over medium heat.
  4. Discard garlic and peppers once fully browned and add potato slices, frying until lightly golden.
  5. Season potatoes with salt and pepper and serve.

Makes 4 servings
