Chili Fried Potatoes

1 pound new potatoes
2 red chilies
4 cloves garlic, mashed
3 tablespoons olive oil
water
salt and pepper
- Place potatoes in a large pot and top with water. Bring to a boil and cook until tender, about 20 minutes.
- Drain the potatoes and cut into 1/2" slices.
- Meanwhile, heat oil with garlic and chilies in a large skillet over medium heat.
- Discard garlic and peppers once fully browned and add potato slices, frying until lightly golden.
- Season potatoes with salt and pepper and serve.
