Roasted Beets

4 small beets
4 tablespoons balsamic vinegar
salt and pepper
- Preheat oven to 400 degrees.
- Wrap beets in tinfoil and bake in the oven until tender, about 30 minutes.
- Drizzle with balsamic vinegar and season with salt and pepper to serve.
