Roasted Beets

4 small beets
4 tablespoons balsamic vinegar
salt and pepper

  1. Preheat oven to 400 degrees.
  2. Wrap beets in tinfoil and bake in the oven until tender, about 30 minutes.
  3. Drizzle with balsamic vinegar and season with salt and pepper to serve.

Makes 4 servings
