French Peas

2 cups peas
2 tablespoons olive oil
1/4 cup romaine lettuce, finely chopped
1/4 cup parsley
1 teaspoon sugar
salt and white pepper
- Heat oil in a large pan over medium heat.
- Add lettuce to the oil, then top with peas, parsley, sugar, salt and pepper.
- Reduce heat, cover and simmer until peas are tender, about 10 minutes.
Makes 4 servings
