French Peas

2 cups peas
2 tablespoons olive oil
1/4 cup romaine lettuce, finely chopped
1/4 cup parsley
1 teaspoon sugar
salt and white pepper

  1. Heat oil in a large pan over medium heat.
  2. Add lettuce to the oil, then top with peas, parsley, sugar, salt and pepper.
  3. Reduce heat, cover and simmer until peas are tender, about 10 minutes.

Makes 4 servings
