Apple Chutney

2 medium tart apples, peeled, cored and chopped
1/4 small red onion, minced
2 tablespoons butter
1/4 cup brown sugar
1 teaspoon orange zest, grated
1 tablespoon ginger puree
1/2 teaspoon ground cinnamon (optional)

  1. Melt butter in a large sauce pan over medium-high heat and add remaining ingredients.
  2. Bring mixture to a boil, reduce heat to a simmer and cook uncovered, stirring occasionally, until sauce has thickened and apples are tender.
  3. Allow mixture to cool before serving.

Makes 4 servings
