Chicken and Brown Rice Bake

4 chicken breasts or thighs
1 cup brown rice
2 cups chicken stock
1 cup mushrooms, sliced
3 cloves garlic, minced
1 small onion, chopped
3 tablespoons butter
salt and pepper

  1. Preheat oven to 400 degrees.
  2. Melt butter in a large sauce pan over medium heat and add chicken, browning lightly on each side, about 2 minutes per side.
  3. Put rice in a casserole dish along with onions, garlic and mushrooms. Season with salt and pepper and top with chicken stock.
  4. Place chicken breasts and butter on top of rice and vegetables and bake covered until liquid has been absorbed and rice is cooked, about 45 minutes.
