Chicken and Brown Rice Bake

4 chicken breasts or thighs
1 cup brown rice
2 cups chicken stock
1 cup mushrooms, sliced
3 cloves garlic, minced
1 small onion, chopped
3 tablespoons butter
salt and pepper
- Preheat oven to 400 degrees.
- Melt butter in a large sauce pan over medium heat and add chicken, browning lightly on each side, about 2 minutes per side.
- Put rice in a casserole dish along with onions, garlic and mushrooms. Season with salt and pepper and top with chicken stock.
- Place chicken breasts and butter on top of rice and vegetables and bake covered until liquid has been absorbed and rice is cooked, about 45 minutes.
