White Asparagus with Brown Butter Crumbs

1 pound white asparagus, peeled and trimmed
1/4 cup butter
2/3 cup toasted bread crumbs
salt and pepper
boiling water

  1. Arrange asparagus in a large skillet and season with salt and pepper.
  2. Add boiling water to the skillet, cover and place over medium heat.
  3. Meanwhile, brown butter by placing it in a saucepan over medium-high heat.
  4. Add the bread crumbs to the butter and coat. Remove from heat.
  5. When asparagus is tender, about 10 minutes, drain and return the spears to the skillet to remove excess moisture.
  6. Arrange asparagus on a plate and top with browned butter and bread crumbs.

Makes 4 servings
