Roasted Potato and Carrot

2 medium potatoes, peeled and cubed
4 medium carrots, peeled and cut into 1" pieces
1 tablespoon extra virgin olive oil
salt and pepper
- Preheat oven to 450 degrees.
- Coat potatoes and carrots with olive oil and season with salt and pepper.
- Put vegetables in a baking dish and bake under tender, occasionally shuffling to prevent sticking, about 30 minutes.
Makes 4 servings
