Roasted Potato and Carrot

2 medium potatoes, peeled and cubed
4 medium carrots, peeled and cut into 1" pieces
1 tablespoon extra virgin olive oil
salt and pepper

  1. Preheat oven to 450 degrees.
  2. Coat potatoes and carrots with olive oil and season with salt and pepper.
  3. Put vegetables in a baking dish and bake under tender, occasionally shuffling to prevent sticking, about 30 minutes.
