Bacon and Cheese Pastries

2 teaspoons sugar
1/2 cup warm water
1 tablespoon yeast
1-1/2 cups flour
1/2 teaspoon salt
2 tablespoons olive oil
1 egg, beaten
4 slices bacon, cooked and halved
1/2 cup cheddar, grated
1/2 cup Monterey jack, grated
1/4 cup parmesan, grated
1 ounce cream cheese, softened
1 egg, beaten
salt and pepper
- Preheat oven to 400°.
- Add yeast, sugar and ¼ cup water to a small bowl and let sit for 5 minutes.
- Combine flour, salt, oil and the rest of the water and mix with the yeast mixture. Add more flour or water if necessary.
- Pick up the ball of dough with your hands and knead on a lightly floured surface until smooth.
- Roll out dough to ¼" thickness and cut out circles with the rim of a glass.
- Combine cheeses, cream cheese and beaten egg and season with salt and pepper.
- Place a piece of bacon into the center of a circle and top with about a tablespoon of the cheese mixture.
- Fold over, crimp the edges and brush with beaten egg. Repeat for remaining circles.
- Place pastries on a greased baking sheet and bake until golden brown, about 15 minutes.
Makes 8 pastries
