Jalapeno Fried Rice

1 cup white rice
2 cups chicken stock
4 cloves garlic
1/2 small onion, chopped
1 jalapeno, stemmed and chopped
3 tablespoons corn oil

  1. Heat oil in a large skillet over medium-high heat.
  2. Add rice and stir often until browned, then add the garlic, onion and jalapeno.
  3. Add the chicken stock and reduce heat to a simmer. Continue cooking until all of the liquid has been absorbed.

Makes 6 servings
