Dhal

1 cup yellow split peas
1/4 cup ghee or olive oil
1 large onion, chopped
3 cloves garlic, chopped
1 teaspoon ginger puree
1 teaspoon turmeric
3 cups water
salt
- Soak peas for an hour in enough water to cover. Discard ones that float to the top and then drain.
- Heat ghee in a large skillet over medium heat and add onion, garlic, ginger and turmeric. Cook until the onions are soft.
- Stir in the peas, then add the water, cover and reduce heat to a simmer.
- Continue to cook, stirring occasionally, until all of the liquid has been absorbed.
Makes 4 servings
