Burekas

1 tablespoon sugar
1 cup warm water
1 tablespoon active dry yeast
3 cups flour
1 teaspoon salt
1/4 cup olive oil

4 ounces feta cheese, crumbled
1 cup spinach, cooked
1 egg yolk, beaten
2 tablespoons sesame seeds (optional)
salt and pepper

  1. Preheat oven to 450°.
  2. Add yeast, sugar and 1/4 cup water to a small bowl and let sit for 5 minutes.
  3. Combine flour, salt, oil and the rest of the water and mix with the yeast mixture.
  4. Pick up the ball of dough with your hands and knead on a lightly floured surface until smooth.
  5. Roll out dough to 1/4" thickness and cut out circles with the rim of a glass.
  6. Combine feta and spinach and place about a teaspoon of the mixture into each circle.
  7. Fold the circles over and crimp the edges to seal shut. Transfer to a greased baking sheet.
  8. Brush the tops of the burekas lightly with beaten egg yolk and top with sesame seeds, if desired.
  9. Bake until they are well browned, about 15-20 minutes.

Makes 6 servings

This makes about 18 burekas.
