Lomo Saltado

8 ounce sirloin steak, thinly sliced
2 tablespoons olive oil
1/2 small onion, sliced
2 cloves garlic, minced
1/2 small red pepper, chopped
1 large potato, boiled and cubed
1 red chili pepper, stemmed, seeded and minced
1 medium tomato, chopped
1 teaspoon fresh oregano, chopped
1/2 teaspoon ground cumin
salt and pepper

  1. Heat oil in a large non-stick skillet and sauté onion, garlic and bell pepper until tender.
  2. Add the potato and cook, stirring occasionally, until potato just begins to brown.
  3. Add the remaining ingredients, stir and cook for a minute or two for flavors to meld.
  4. Serve over rice.
