Lomo Saltado

8 ounce sirloin steak, thinly sliced
2 tablespoons olive oil
1/2 small onion, sliced
2 cloves garlic, minced
1/2 small red pepper, chopped
1 large potato, boiled and cubed
1 red chili pepper, stemmed, seeded and minced
1 medium tomato, chopped
1 teaspoon fresh oregano, chopped
1/2 teaspoon ground cumin
salt and pepper
- Heat oil in a large non-stick skillet and sauté onion, garlic and bell pepper until tender.
- Add the potato and cook, stirring occasionally, until potato just begins to brown.
- Add the remaining ingredients, stir and cook for a minute or two for flavors to meld.
- Serve over rice.
