Peas with Parsley

4 cups peas
4 tablespoons olive oil
1 large onion, sliced
1/2 cup vegetable stock
1/4 cup fresh parsley, chopped
salt and pepper
- Heat the oil in a skillet over low heat and saute the onions until tender.
- Stir in the peas, cover and cook for about 10 minutes.
- Meanwhile, bring the stock to a boil in a pot over medium-high heat.
- Add the remaining ingredients to the peas and pour the boiling stock over it.
- Simmer uncovered until the stock has been absorbed and serve.
Makes 4 servings
