Beets with Bechamel
3 cups beets, cooked and sliced
1/4 cup butter
1/4 cup flour
2 cups milk
1/8 teaspoon nutmeg
salt and pepper
- Melt butter over medium heat in a medium sauce pan.
- Whisk in flour, then add milk and bring to a boil.
- Continue whisking until thickened, then add a pinch of grated nutmeg.
- Preheat oven to 350 degrees.
- Grease an ovenproof dish and arrange beet slices in it.
- Season with salt and pepper and cover with prepared sauce.
- Bake until beets are hot and bubbly, about 20 minutes.
