Tomatoes Provencal

4 medium tomatoes, tops removed
1 cup bread crumbs
3 tablespoons extra virgin olive oil
2 cloves garlic, minced
1/2 cup fresh parsley, chopped
1/4 teaspoon dried thyme
salt and pepper

  1. Preheat oven broiler.
  2. Combine bread crumbs, garlic, parsley, thyme, salt and pepper and half the oil in a food processor until mixed well.
  3. Cover tops of tomatoes with bread crumbs and drizzle with olive oil.
  4. Place close to broiler and broil until bread crumbs brown.

Makes 4 servings
