Apricot Quinoa Pilaf

1/2 cup quinoa
1-1/2 cups orange juice
1/4 cup dried apricots
1 tablespoon lemon zest
1 tablespoon olive oil
- Heat olive oil over medium heat in a large pot with the lemon zest and quinoa.
- Cook until the quinoa turns lightly brown and you can smell the lemon.
- Add the apricots and stir to coat, then top off with orange juice.
- Reduce heat and simmer until quinoa has absorbed all of the liquid.
Makes 4 servings
