Basil Carrots

4 large carrots, peeled and grated
2 tablespoons olive oil
1/4 cup fresh basil
1 lemon
salt and pepper
- Heat olive oil in a skillet over medium heat.
- Add carrots and saute until slightly tender, about 10 minutes.
- Add the juice of one lemon, basil and season with salt and pepper.
- Continue cooking for another minute or two and serve hot.
Makes 4 servings
