Szechuan Cucumber Radish Salad

1 large English cucumber, peeled, seeded and sliced
1 cup radishes, sliced
3 scallions, chopped
4 cloves garlic, finely chopped
1 tablespoon tamari
1/2 teaspoon sesame oil
1 teaspoon rice vinegar
1/2 teaspoon Splenda
1/4 teaspoon red pepper flakes
black pepper
- Combine garlic, tamari, sesame oil, vinegar, Splenda, red pepper flakes and pepper to make dressing.
- Toss cucumbers, radishes and scallions with dressing.
Makes 4 servings
