Broccoli and Cheddar Soup
2 cups broccoli flowerets
1 cup chicken broth
1 cup cheddar cheese, shredded
1 cup cream
salt and pepper
- Bring chicken broth to a boil and cook broccoli in it until tender.
- Reduce heat and stir in cream and cheese.
- Let warm, season with salt and pepper and serve.
Makes 4 servings
Lettuce Rollups
4 ounces assorted deli meat (beef, ham, turkey, salami etc.), sliced
4 ounces assorted cheese (cheddar, swiss, havarti etc.)
16 lettuce leaves
- Roll complimentary cheeses (such as turkey and havarti, beef and cheddar and so on) in individual leaves of lettuce.

Wrap It Up
This is what happens when you have 15 minutes to prepare dinner; you get a low-carb version of soup and sandwiches. I found a quick recipe for Broccoli and Cheddar Soup that looked as though it could be prepared in 10 minutes flat. It was, and it was bad. The cheese coated the broccoli and left behind a vaguely creamy chicken broth. Overall a waste of perfectly good ingredients, but the cheese covered broccoli was alright. A little bit of starch (flour, cornstarch etc.) would've gone a long way to give this soup a bit of body and bring it altogether, but then it wouldn't be low-carb, would it? I could've kept adding cheese, but then it would've no longer been soup and just turned to broccoli in cheese.
The Lettuce Roll Ups weren't thought through too well, either. We didn't buy lettuce, so we tried to awkwardly roll up salvaged pieces around the core leftover from Taco Salad and it didn't go so well. I really wish I'd thought this through better. After scarfing down some cheese coated broccoli and a bunch of crackerless appetizers, I was really starting to feel the burn. Meat and cheese are not feel good foods or suitable substitutes. I popped a couple of Tums and Shannon and I took off to the movies, cursing tonight's dinner.
