Guacamole

2 medium avocados, peeled and pitted
1/2 lime
2 tablespoons onion, minced
2 tablespoons extra virgin olive oil
salt

  1. Mash all of the ingredients together in a bowl with a fork.
  2. Season with salt to taste. Cover and refrigerate before serving.

Makes 4 servings

This makes about 1 cup.
