Garlic Risotto with Peas

1 cup Arborio rice
3/4 cup peas
12 cloves garlic, halved
4 cups water
salt and pepper

  1. Bring water to a boil and add garlic.
  2. Reduce heat and simmer for half an hour, then season with salt and pepper to taste.
  3. Continue simmering broth. In a separate pan, add rice and 1/4 of the broth.
  4. Gradually add more broth as the rice absorbs the liquid until only 1/2 cup remains.
  5. Add the peas to the remaining broth and cook until tender, about 2 minutes.
  6. Add the peas and remaining broth to the rice and allow liquid to absorb.
  7. Season with salt and pepper to taste and serve.
