Whole Roasted Potatoes with Garlic

4 small potatoes, peeled
2 tablespoons olive oil
3 cloves garlic, finely minced
salt and pepper
water
- Preheat oven to 400 degrees.
- Boil or microwave potatoes in water until fork tender.
- Drain potatoes and coat with olive oil, then bake in an ovenproof dish until the top begins to brown, about 20 minutes.
- Remove from the oven and allow to slightly cool to the touch. Roll potatoes in minced garlic to coat, season with salt and pepper and serve immediately.
