Whole Roasted Potatoes with Garlic

4 small potatoes, peeled
2 tablespoons olive oil
3 cloves garlic, finely minced
salt and pepper
water

  1. Preheat oven to 400 degrees.
  2. Boil or microwave potatoes in water until fork tender.
  3. Drain potatoes and coat with olive oil, then bake in an ovenproof dish until the top begins to brown, about 20 minutes.
  4. Remove from the oven and allow to slightly cool to the touch. Roll potatoes in minced garlic to coat, season with salt and pepper and serve immediately.
