Cannellini and Spinach Sauté

3 tablespoons olive oil
1 medium onion, chopped
4 cloves garlic, chopped
1 pound spinach
1 tablespoon lemon juice
2 teaspoons lemon zest
16 ounces canned cannellini beans
1/2 teaspoon red pepper flakes
salt and pepper
- Heat olive oil in a large skillet over medium-high heat.
- Add onion, garlic and red pepper flakes and sauté until tender.
- Add spinach and cook until it wilts.
- Reduce heat, add lemon juice, zest and beans and simmer for 15 minutes.
- Season with salt and pepper to serve.
Makes 4 servings


i made this…
and as you know…
i overcooked the spinach…
and added a shit load of red pepper flakes…
HOTTTTTTTTTTT…
It still looked edible to me. I love spinach and beans.
