Cannellini and Spinach Sauté

3 tablespoons olive oil
1 medium onion, chopped
4 cloves garlic, chopped
1 pound spinach
1 tablespoon lemon juice
2 teaspoons lemon zest
16 ounces canned cannellini beans
1/2 teaspoon red pepper flakes
salt and pepper

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add onion, garlic and red pepper flakes and sauté until tender.
  3. Add spinach and cook until it wilts.
  4. Reduce heat, add lemon juice, zest and beans and simmer for 15 minutes.
  5. Season with salt and pepper to serve.

Makes 4 servings

i made this…
and as you know…
i overcooked the spinach…
and added a shit load of red pepper flakes…
