Simple Side Salad

3 cups mixed greens (escarole, endive and radicchio)
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon sugar
salt and pepper
- Whisk together olive oil and vinegar in a small bowl and add sugar to taste.
- Add vinaigrette to greens and toss to coat.
- Season with salt and pepper.
Makes 4 servings
