Mushroom Ragout

2 cups crimini mushrooms
1 small onion, chopped
2 cloves garlic, minced
3 tablespoons olive oil
1/2 green pepper, chopped
1 tablespoon dried parsley
salt and pepper
- Heat olive oil over medium heat and sauté onions and garlic until tender.
- Add the mushrooms and green pepper and season with salt, pepper and dried parsley.
- Cook until mushrooms are tender and serve immediately.
Makes 4 servings
