Mushroom Ragout

2 cups crimini mushrooms
1 small onion, chopped
2 cloves garlic, minced
3 tablespoons olive oil
1/2 green pepper, chopped
1 tablespoon dried parsley
salt and pepper

  1. Heat olive oil over medium heat and sauté onions and garlic until tender.
  2. Add the mushrooms and green pepper and season with salt, pepper and dried parsley.
  3. Cook until mushrooms are tender and serve immediately.

Makes 4 servings
