Black Bean Patties

1 cup cooked black beans
2 cups whole wheat bread crumbs
3 tablespoons fresh basil, chopped
2 tablespoons tomato paste
2 tablespoons olive oil
salt and dried red pepper flakes

  1. Combine all of the ingredients but the olive oil a food processor.
  2. Form the mixture into 4 individual patties.
  3. Heat the olive oil in a skillet over medium heat and fry until crispy, then flip and crisp the other side.
  4. Serve with a sauce or as a substitute for a burger.

Makes 4 servings
