Lemon Dill Trout in Foil

1 pound whole rainbow trout, cleaned
2 cloves garlic, sliced
1/4 lemon, sliced
1/2 cup fresh dill
salt and white pepper

  1. Preheat oven to 350 degrees.
  2. Take a piece of tinfoil twice the length of the trout and fold it in half. Fold the outer edges in several times to form a pocket with an opening at the top.
  3. Place garlic, lemon and dill into the cavity of the fish and season well with salt and pepper.
  4. Seal the opening, place the package on a baking sheet and bake for 20-25 minutes.
  5. Remove from oven and allow to rest for a couple of minutes. Serve in the package or removed to a plate.

Makes 2 servings

I’m sorry this one didn’t turn out, but it’s nice how the fish skin and foil match so well.

I bet a little splash of white wine in the packet wouldn’ve been nice. =)
