Homemade Potato Chips

4 medium potatoes, peeled and very thinly sliced
oil or deep fryer
salt
water
- Place sliced potatoes in ice water and chill for at least an hour.
- Remove potato slices from water and pat dry with a towel.
- Heat enough oil to form an even layer in a skillet over medium heat or else heat up the deep fryer.
- Add potato slices in small enough batches that they won't touch each other.
- Allow to brown and flip, browning the other side, about 12 minutes.
- Remove from the oil and place between sheets of paper towel to remove excess oil.
- Season with salt while still hot.
Makes 8 servings
