Homemade Potato Chips

4 medium potatoes, peeled and very thinly sliced
oil or deep fryer
salt
water

  1. Place sliced potatoes in ice water and chill for at least an hour.
  2. Remove potato slices from water and pat dry with a towel.
  3. Heat enough oil to form an even layer in a skillet over medium heat or else heat up the deep fryer.
  4. Add potato slices in small enough batches that they won't touch each other.
  5. Allow to brown and flip, browning the other side, about 12 minutes.
  6. Remove from the oil and place between sheets of paper towel to remove excess oil.
  7. Season with salt while still hot.

Makes 8 servings
