Fish and Chips

I don't eat as much fish as I'd like to. Again, it's the whole landlocked province driving up the prices and lowering the quality factor. Occasionally you can find simple and common fish, like trout, that looks fresh and is affordable. Such was the case tonight, so we picked some up.
Lemon Dill Trout in Foil was a bit of a disappointment. Normally I wouldn't consider lemon and dill with trout, but I have a fridge full of dill and lemons right now and the recipe popped up in a google search, so I figured I'd try it out. Since it is cooked in a foil packet the meat is unbelievably tender and easily flaked away, but the flavor of trout is not complimented by the dill and lemon to me.
We figured it'd be fun to do fish and chips, so I carefully sliced a couple potatoes into extremely thin slices and fried them up in oil. Homemade Potato Chips isn't really worth the time or effort involved, but there is sort of a coolness factor of knowing that it's possible and that you've done it. They taste just like plain/regular/original chips that you'd buy in a bag.
To round things out I added some Mashed Carrots. I like them, Shannon likes them, and pretty much anyone I know likes them. You can easily disguise more vegetables in the mix, like unfavorable turnips or parsnips and despite the trout and dill combo not working out so well, the dill and the carrots are great together.
