Poached Egg on Green Beans
1 large egg
1 cup French-style green beans
1/4 teaspoon lemon juice
2 cloves garlic, crushed
1 tablespoon olive oil
salt and pepper
water
- Steam or boil beans until tender.
- Meanwhile, fry garlic cloves in oil until brown, then remove and discard them.
- Boil a small saucepan of salted water over high heat, then crack the egg into the water, cover and remove from heat.
- Toss cooked green beans in garlic oil and sprinkle with salt and lemon juice.
- Transfer to a plate and season with salt and pepper.
