Poached Egg on Green Beans

1 large egg
1 cup French-style green beans
1/4 teaspoon lemon juice
2 cloves garlic, crushed
1 tablespoon olive oil
salt and pepper
water

  1. Steam or boil beans until tender.
  2. Meanwhile, fry garlic cloves in oil until brown, then remove and discard them.
  3. Boil a small saucepan of salted water over high heat, then crack the egg into the water, cover and remove from heat.
  4. Toss cooked green beans in garlic oil and sprinkle with salt and lemon juice.
  5. Transfer to a plate and season with salt and pepper.

Tonight was the February edition of girls night, so Shannon is out and about eating Italian themed foods and I'm at home to cook for myself. It's just as well since I happened to have indulged in excess amounts of alcohol last night and I am not particularly enthused about doing much of anything.

Still, I felt it necessary to prepare something that Shannon is either allergic to or dislikes, so I quickly fixed up a Poached Egg on Green Beans complete with runny yolks, just like I like them. This dish took mere minutes to prepare and, while it's not exactly what I would typically describe as hangover food, it hit the spot. The beans have a bit of garlic and lemon added to them which compliments the poached egg quite nicely.
