Peas and Prosciutto

2 tablespoons olive oil
1/2 small onion, chopped
2 garlic cloves, chopped
2 cups frozen peas, thawed
4 ounces prosciutto, diced
salt and pepper

  1. Heat olive oil in a large skillet over medium low-heat and sauté the onion and garlic until tender.
  2. Add the peas and toss to coat, then stir in the prosciutto and cook for about 2 minutes.
  3. Remove from heat and season with salt and pepper.

Makes 4 servings
