Gyros

1 pound ground lamb
2 slices dried bread
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 teaspoon salt
1/4 teaspoon peppercorns
1 teaspoon fenugreek seeds
1 teaspoon cumin seeds

  1. Pulse bread in food processor into fine crumbs.
  2. Combine the seasoning (remaining ingredients except the lamb) in a mortar and pestle and break down into a paste.
  3. Add lamb and seasoning to the food processor and pulse until well mixed, scraping down as necessary.
  4. Remove mixture and divide into 2 balls. Flatten the balls into 1/8" thin patties between sheets of saran wrap.
  5. Fry patties in a non-stick skillet over medium heat, flipping once until cook through to center, about 10 minutes.
  6. Allow to cool to the touch and slice into thin pieces.
