Curried Turnips

1 small onion, chopped
2 tablespoons olive oil
3 small turnips, peeled and thinly sliced
1 medium green apple, cored and chopped
2 teaspoons curry powder
1 teaspoon salt
2 tablespoons lemon juice

  1. Heat olive oil in a large skillet over medium heat and sauté the onion until tender.
  2. Stir in the turnip and continue to cook for about 5 minutes.
  3. Add the apple, curry powder and salt and cook until tender, about 8 minutes.
  4. Squeeze lemon juice over dish before serving.

Makes 4 servings
